One of the principles of Wing chun is about offense and defense at the same time for coverage. Both gentlemen (Eric and Marios) are right about the rechambering hand. I'd like to add also that it is also the most neglected principle when doing the forms, and it's an important aspect that you do need to be aware of at all times when you do any of the forms and contact drills like chisao or lapsao. The natural tendency of most people is to put all of their focus on the lead hand, whether it's defending or attacking, and completely forget the other.
