I think you have a basic misconception of what the forms are. They do not contain techniques, per se. Rather the forms are a variety of movements which, when combined in a certain manner, constitute practical techniques. So the literal answer to your question is no, the three forms do not contain all the techniques in Wing Chun. The Wooden Dummy form does contain some techniques, but these are examples of what is possible; the Wooden Dummy form is not a comprehensive repository of Wing Chun technique.

While my teaching is not in book form, I do have a series of tapes. However, these are designed for individuals who have already learned the basics. The tapes are an overview; they are not a comprehensive course in Wing Chun.

With regard to your method of learning, you are of course free to do anything you want. However, my belief is that you are not able to learn the techniques alone because these are derived from the forms, but are not the forms themselves. The techniques, the theory of Wing Chun, and the practical application are learned from an instructor and in the experience of working with partners. Consider the forms to be equivalent to the letters of the alphabet. To learn to shape these into words and sentences, a teacher is necessary. Wing Chun is a very precise art. A small misunderstanding or misinterpretation in the beginning can become a major deviation if not corrected early in the process.
